The meeting opened at 7:03 pm.
The Pledge of Allegiance was led by Trustee Cardali.
The Village Clerk read the following Legal Notice:
NOTICE IS HEREBY GIVEN that the Board of Trustees of the Village of Babylon will hold a Public Hearing on Tuesday, March 11th, 2025, at 7:00 p.m. at Babylon Village Hall, 153 West Main Street, Babylon, New York 11702, or as soon thereafter as can be heard, to consider the following:
- The application of Giuseppe Ruta, of La Bottega to open a full-service Italian Restaurant to be located at 238 Deer Park Avenue, Village of Babylon.
Copy of application and plans may be examined at the office of the Village Clerk, between the hours of 9:00am and 5:00pm, Monday through Friday.
All interested persons should appear at the above time and place and they will be given the opportunity to be heard. All applicants and their duly appointed representatives must appear in person at the above hearing.

Mr. Ruta stated the La Bottega idea started 22 years ago in Garden City. Owned by himself and wife, with 7 active locations and opening 2 more. La Bottega is a chic Milan-style place, serving fresh, affordable food, mainly paninis and salads. Mr. Ruta handed updated plans.
Trustee Seibert asked if the other locations were similar in what he is opening here. Mr. Ruta said similar. Trustee Seibert asked his estimated percentage of takeout business. Mr. Ruta projects it being 50/50. Trustee Seibert asked about seating. Seating is the same, just making the counter bigger for takeout.
Trustee Bencivenga wished him luck. Reminder of door dash/ pickup not using the “No Parking” space in front. Trustee Bencivenga asked if there were plans for live music. Mr. Ruta said just low background music.
Trustee Cardali asked if family would be running the business. Mr. Ruta said yes. Trustee Cardali asked what renovations were being done and Mr. Ruta stated only cosmetic changes.
Trustee Goodwin asked about table layout. Mr. Ruta said he will adjust as needed. Trustee Goodwin asked where the pickup will be. Mr. Ruta is anticipating a strong take-out business and pick up will be in the front with two registers.
Mayor Adams asked about the window counter and if the window would open. Mr. Ruta said the window would remain the same. Mayor Adams asked for clarification on the number of seats. Mr. Ruta stated no more the 28 seats.
The meeting was opened to the public and no one addressed the Board.
On the motion of Trustee Seibert, seconded by Trustee Goodwin and unanimously carried, it was,
RESOLVED to reserve decision.
Meeting adjourned at 7:14 PM.
